I don't really like the example given. Personally, even if I was able to save this photo, I would still not give this to my clients, but that could just be my opinion. However, the point of the matter is that shooting RAW is critical when you are shooting an event like a wedding.

i only shoot RAW too. Not even with jpeg. If i dont like an image enough to spend the time to convert it, then it's not worth keeping! ha
